  • 1 cup frozen corn kernels
  • 3/4 cup coarse cornmeal
  • 2 tbsp unsalted butter
  • 1/3 cup Parmesan cheese (grated)
  • 1-1/2 cup milk
  • 1 garlic clove (finely minced)
  • ground black pepper to taste
  • coarse sea salt to taste
  • 1/4 crisp bacon bits (optional)
  • 1/4 cup broken popcorn (optional)


  1. Heat unsalted butter in a saucepan on a medium flame.
  2. Add finely minced garlic to the pan and stir fry for a minute.
  3. Add frozen corn kernels and cook for 2 minutes.
  4. Add milk to the pan and bring it to a boil.
  5. Switch the flame to low-medium.
  6. Slowly add coarse cornmeal in small batches while stirring continuously.
  7. Cook until you get a creamy texture.
  8. Add grated cheese and switch off the flame.
  9. Stir and combine all the ingredients.
  10. Season with ground black pepper and salt.
  11. Top each serving with broken popcorn and crisp bacon bits.
