  • 20 razor clams
  • 6 garlic cloves (finely minced)
  • 4 tsp fresh lime juice
  • 1/4 cup flat-leaf parsley (finely chopped)
  • 1/2 cup extra virgin olive oil
  • kosher salt to taste


  1. Rinse all the clams and pat-dry them with a kitchen cloth.
  2. In a small bowl, add minced garlic, lime juice, chopped parsley, olive oil, and kosher salt.
  3. Whip briskly for a minute or two and keep the vinaigrette aside.
  4. Heat a nonstick flat pan on a medium-high flame.
  5. Grease with cooking spray and add clams to the pan in a single layer.
  6. Cook until they open.
  7. Gently flip them on the open side and sear for half a minute.
  8. Again, gently flip back to their original positions and switch the flame to low.
  9. Spoon out garlic vinaigrette on top of each clam.
  10. Cover with a lid and cook for another two minutes.
