Ingredients:
  • 750 gm littleneck clams
  • 350 gm tagliatelle
  • 2 big garlic cloves (slightly crushed)
  • 1/3 cup dry white wine
  • pinch of garlic powder
  • 2 to 3 tsp flat-leaf parsley (finely chopped)
  • 1/4 cup extra virgin olive oil
  • kosher salt to taste

Instructions:

  1. Wash the clams under running water. One can also use razor clams if they're easily available.
  2. Add 2/3 cup salted water and dry white wine to a sauce pan and bring it to a boil.
  3. Lower the flame to medium and add clams to the pan.
  4. Cook for about 3 to 4 minutes. Keep aside.
  5. Cook the pasta according to the instructions given on the packet.
  6. Heat olive oil in a separate sauce pan and add both the crushed garlic cloves.
  7. Stir until the cloves turn light brown.
  8. Remove browned cloves from the pan and add cooked clams to it along with the leftover liquid, if any.
  9. Season with garlic powder and kosher salt.
  10. Stir for just half a minute and add pasta to the pan.
  11. Gently stir and combine the pasta with the clam.
  12. Add finely chopped parsley to the pan and give it a gentle stir before switching off the flame.
  13. Serve hot.
