Ingredients:
  • 2-1/2 cups podded broad beans (soaked overnight)
  • 2/3 cup chickpea flour
  • 1/3 cup chickpea lentil/dhal (coarsely ground)
  • 1-1/2 tsp ground cumin
  • freshly ground black pepper to taste
  • 1/2 cup parsley & mint leaves (finely chopped)
  • 2 to 3 garlic cloves (finely minced)
  • 1-1/2 tsp extra virgin olive oil
  • canola oil for deep frying
  • salt to taste

Instructions:

  1. Soak coarsely ground chickpea lentil for an hour in water. Drain before use.
  2. Except coarsely ground chickpea lentil and canola oil, add rest of the ingredients in a food processor.
  3. Blend for about a minute to combine all the ingredients.
  4. Transfer to a large bowl and add coarsely ground chickpea lentil.
  5. Combine everything with a spatula.
  6. Add chickpea flour (if needed) to get the right batter consistency.
  7. If you're adding extra chickpea flour, make sure to correct the seasoning as well.
  8. With gentle hands, make falafel patties of your desired shape and thickness.
  9. Heat canola oil in a large pot on a medium flame.
  10. Gently, fry all the falafels in batches.
  11. Make sure you fry them 2 minutes each side.
  12. Serve hot.
