Do once try this delicious and easy lemon tart preparation consisting of fresh lime juice and zest which gives it a refreshing and an irresistible flavor.

Ingredients:
- Ingredients (Crust):
- 1-1/2 cups plain flour
- 130 gm butter (unsalted)
- 1/2 cup icing sugar
- 3 large egg yolks Ingredients (Filling):
- 140 gm castor sugar
- 4 medium-sized eggs
- 1/3 cup lemon juice
- 2 tsp lemon zest
- 160 ml double cream
Instructions:
- Combine all the crust ingredients and blend in a food processor until you get a smooth dough base.
- Flatten the pastry dough in a tart tin (approx 22cm to 24cm diameter) and cut out the extra dough from the edges.
- Gently press the raw crust with your fingers and refrigerate the tart tin for about 45 minutes.
- Preheat oven to 170° C.
- Transfer the tart tin to the oven and bake the crust for about 20 to 25 minutes.
- Take a large bowl and add castor sugar, eggs, lemon juice, lemon zest, and double cream.
- Whip it briskly until you get a smooth filling liquid.
- Pour it within half-baked crust and transfer the tart tin back to the oven.
- Bake for about 30 minutes.
- Let the tart cool down to the room temperature.
- Slice the tart with a sharp knife.
- Serve with whipped cream.
