Today's recipe is rich in taste and is predominantly flavored with the combination of garlic and lemon. It's a perfect recipe for a brunch as well as for a fulfilling dinner. Feel free to add local fresh herbs to enhance and improve the recipe. The delicate and sweet flavor of a fresh rainbow trout is divine. When roasted to perfection, it just livens up the taste buds. One can also add potatoes, beetroots, and other fleshy veggies with trout to increase the number of servings. Lemon can also be replaced with orange juice and slices which are going to give it a unique aroma and flavor. Let's get started and roast our rainbow trout.

Roasted Rainbow Trout with Garlic and Lemon

Savor this roasted rainbow trout preparation which is delicately flavored with fresh lime and loads of garlic for an aromatic and mouth-watering taste.

  • 1 rainbow trout (scaled, gutted and cleaned)
  • 4 to 5 thin slices of lime
  • 1/4 cup fresh lime juice
  • 8 to 10 garlic cloves (crushed)
  • pinch of garlic powder
  • pinch of onion powder
  • a stick of butter (melted)
  • cilantro sprigs (for garnishing)
  • oodles of extra virgin olive oil
  • fresh ground black pepper (to taste)
  • Kosher salt (to taste)


  1. Preheat oven at 220 °C.
  2. Make 4 or 5 deep vertical cuts on top of the trout with a sharp knife to insert the lemon slices.
  3. Rub kosher salt and ground pepper both inside out of the trout and keep aside for at least 5 minutes.
  4. Remember, we're also using butter so moderate the quantity of salt used accordingly.
  5. Take a bowl and add lime juice, crushed garlic, garlic powder, onion powder, melted butter and about 1/5 cup of extra virgin olive oil in it.
  6. Whip and mix everything briskly for about a minute.
  7. Apply this marinade both inside out of the trout and make sure all the crushed garlic cloves are placed within the belly of the fish.
  8. Place a parchment sheet or an aluminum sheet on the baking tray and gently top it with the marinated trout.
  9. Now insert fresh lime slices within the cuts made earlier in step 2.
  10. Pour the remaining marinade (if any) on top of it.
  11. Roast for about 20 to 25 minutes.
  12. Garnish with cilantro sprigs and serve hot.
