
Easy Pineapple Tarts Recipe

Do try these flavorful pineapple tarts which are baked to perfection and goes well with tea, coffee or with any non-alcoholic beverage of your choice.

Ingredients:
- 1-1/4 cup all-purpose flour
- 1 cup self-raising flour
- 1/5 tsp salt
- 1 egg (beaten)
- 1 egg yolk (beaten)
- 2 cups pineapple jam
- 175 gm butter
- cold water (as per requirement)
Instructions:
- Preheat oven at 180 °C.
- Sift all-purpose flour, self-raising flour and salt in a large bowl.
- Add butter in it and continuously mix everything with a fork till all the lumps are removed.
- Add whipped egg yolk and cold water in the dough and knead till you get a nice and soft pastry dough base.
- Wrap it in a plastic sheet and refrigerate for at least 45 minutes.
- On a board, roll the pastry dough with 1 or 1.5 cm thickness through a rolling pin.
- Use a tart mould or a food-safe metal ring to cut out the pastry base.
- Place all tart bases on a lightly greased baking tray and brush lightly with whipped egg on top.
- Bake for about 7 to 8 minutes.
- Take out from the oven and place small pineapple jam balls on top of each of the half-baked pastry.
- Make thin dough strips from the leftover dough and make a star structure as shown in the recipe image.
- Once again, brush the strips with whipped egg.
- Bake again for about 7 to 8 minutes.
- Take out from the oven and place on the rack till it reaches the room temperature.
- Serve with tea or coffee.
