Relish this unique and light cake preparation which is flavored with ginger and lemon zest and is baked to perfection for a unique and aromatic flavor.

Ingredients:
- 2-1/2 cups all purpose wheat flour
- 1-1/2 tsp finely grated ginger
- 2 tsp lemon zest
- 1/2 tsp baking soda
- 1-1/2 cups castor sugar
- 1/3 tsp salt
- 4 medium-sized eggs (lightly whipped)
- 75 gm unsalted butter (melted)
- 1/2 cup caramelized brown sugar
- 1 tsp vanilla extract
- chopped nuts and raisins (for garnish)
Instructions:
- Preheat oven at 162 °C.
- Grease the cake tin with butter and keep aside.
- In a large food processor, pulse lemon zest, grated ginger, castor sugar, caramelized brown sugar, whipped eggs and unsalted butter till everything is mixed well and you get a smooth and fluffy texture.
- Add baking soda, salt and vanilla extract in it.
- Pulse again for half a minute.
- Start adding flour in small quantities while pulsing at a low speed.
- Pulse till all the flour is mixed well and everything forms a smooth cake batter.
- Transfer this batter into the greased cake tin.
- Bake for about 60 minutes.
- Let it cool down for about 20 minutes and scrape out the cake.
- Garnish with chopped nuts and raisins.
- Cut in your desired shape before serving.
