Baked Mackerel with Cherry Tomatoes

Delicious baked mackerel

Savor this baked mackerel recipe seasoned with select herbs and enhanced with cherry tomatoes and white onion which give it a unique and irresistible flavor.

  • 900 gm mackerel pieces (1.5" thick)
  • 400 gm cherry tomatoes
  • 1 large white onion (sliced)
  • few rosemary sprigs
  • ground white pepper to taste
  • 2 tsp fresh lime juice
  • oodles of extra virgin olive oil
  • salt to taste


  1. Grease a large baking tray and keep aside. Preheat oven at 180° C.
  2. Apply salt, lemon juice and white pepper powder on the fish pieces and keep aside for 5 minutes.
  3. Arrange seasoned fish pieces, cherry tomatoes and sliced white onion on the baking tray.
  4. Drizzle generous amount of extra virgin olive oil on top.
  5. Sprinkle rosemary sprigs on the fish pieces.
  6. Bake in a preheated oven for about 10 to 12 minutes.
  7. Serve with flat bread.
