It is topped with delicious basil pesto sauce which induces a refreshing flavor in the skewers. As always, I'll recommend using a charcoal-based grill for better results. You can replace bay scallops with the locally available variant. A squeeze of lime juice and a sprinkle of chili flakes can spark a different flavor in these skewers. To increase the number of servings, you can also add cottage cheese cubes and bell peppers within skewers. Do once try these mouthwatering scallop skewers which are flavored with select spices and is grilled to perfection to give you a unique and aromatic taste.

Cooking time: 6 minutes
Servings: 4

  • 600 gm bay scallops (roe included)
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp lemon juice
  • pinch of white pepper powder
  • 1 cup basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 small garlic cloves
  • 1/3 cup extra virgin olive oil
  • oodles of melted butter
  • few lettuce/salad leaves (of your choice)
  • salt to taste


  1. Add basil leaves, Parmesan cheese, pine nuts and garlic cloves in a food processor.
  2. Pulse until you get a coarse consistency.
  3. Now pulse at a slow speed and slowly add the olive oil.
  4. Finish with adding a pinch of salt. Optionally, you can add black pepper too.
  5. Transfer the pesto sauce in a bowl and keep aside.
  6. Take a large bowl and add scallops in it with onion powder, garlic powder, lemon juice, white pepper powder, salt and melted butter.
  7. Apply with spices and butter with hands and keep aside for about 10 minutes.
  8. Prepare a grill with medium intensity.
  9. Thread all the seasoned scallops in skewers.
  10. Grill from both the sides for about 3 minutes each.
  11. Grilling time can deviate either side depending on the intensity of the heat.
  12. Take a serving plate and make a bed of lettuce or salad leaves.
  13. Place grilled scallop skewers on top of it.
  14. Finally, pour basil pesto sauce on top of the skewers with a spoon.
  15. Serve hot.
