Delicious Dill and Whitebait Fritters

Whitebait and dill frittersIt's time to cook up some crisp fritters flavored with fresh dill. We've used whitebait for this one with a light seasoning. You can make it rapidly in just a quarter of an hour. Instead of using dill, local fresh green herbs can also be used. Classic whitebait fritters are shallow fried in butter though you are free to deep fry them in your preferred oil. These fritters are done pretty quickly, so make sure the temperature is not too high while you fry these delicious bites. You can also serve fried potato sticks with these fritters. A crisper version of the same can be prepared by adding a portion of semolina in the flour. It's time to quickly make these extremely delicious and mouthwatering fritters.

Dill and whitebait fritters

Relish these scrumptious and flavorful whitebait fritters which are enhanced with fresh dill and are shallow fried in butter for a crisp and tasty texture.

  • 400 gm whitebait
  • 100 gm dill (finely chopped)
  • 4 large eggs
  • 1/4 cup flour
  • fresh ground pepper (as per taste)
  • 2 tsp lime juice
  • salt to taste
  • few dill sprigs (for garnish)
  • oodles of butter (for shallow frying)


  1. Whisk eggs in a big bowl for a minute.
  2. Add flour, chopped dill, ground pepper, lime juice and salt.
  3. Whip for a minute again and add whitebait.
  4. Coat the flour and egg batter on the fish with a spatula.
  5. Heat generous amount of butter in a large flat nonstick pan.
  6. Switch the flame to medium once the butter starts bubbling.
  7. Add palmful of batter coated whitebaits in the oil.
  8. Shallow fry from both the sides till they turn light brown.
  9. Garnish with dill sprigs and serve hot.
