
Spicy Chili Con Carne with Brown Rice and Greek Yoghurt

Ingredients:
- 750 gm lean minced beef
- 600 gm red beans (soaked overnight)
- 800 ml beef stock
- 2-1/2 cups brown rice
- 500 gm broccoli (chopped)
- cup of Greek yogurt (whipped)
- 3 medium sized white onion (finely chopped)
- 4 garlic cloves (finely minced)
- 3 red peppers (seeds removed & finely chopped)
- 2 tsp cumin (ground)
- 3 tsp coriander seeds (coarsely ground)
- 1/2 tsp cinnamon powder
- 1 tsp hot red chili powder
- 500 gm tomatoes (chopped)
- 1/5 tsp black pepper powder
- 1 tsp lime juice
- coriander sprigs (for garnish)
- 2 tsp olive oil
- sea salt to taste
Instructions:
- There are several ways to make chili con carne and each method is slightly different from the other one.
- Pressure cook red beans in about one liter of water for about 20 minutes.
- Drain excess water, slightly mash the beans and keep aside.
- Heat olive oil in a heavy base deep sauce pan.
- Add onion and garlic in it and saute for about 2 to 3 minutes till onion turns translucent.
- Add minced beef and season with chopped red peppers, ground cumin, ground coriander seeds, cinnamon powder, red chili powder and black pepper powder.
- Stir fry seasoned beef mince continuously for about 8 to 10 minutes till it changes color.
- Add beans, tomatoes, lime juice and sea salt in the sauce pan.
- Continue stir frying for 5 minutes.
- Add beef stock and stir well for about a minute.
- Close the lid and simmer for about 40 to 45 minutes.
- Meanwhile add 1/4 tsp sea salt in about one liter of water and bring it to a boil.
- Add brown rice and switch the flame to medium.
- Continuously stir till the rice is done. Almost 12 to 15 minutes.
- Drain excess water and keep aside.
- Steam broccoli for about 6 minutes and keep aside.
- Take a generous helping of boiled rice in the plate with hot and spicy chili con carne.
- Top it with whipped Greek yogurt and garnish with a coriander sprig.
- Serve hot with steamed broccoli.
