Cheesy Paccheri pasta platterLet's make another pasta recipe made with chewy and delicious Paccheri pasta tubes drenched in a cheesy sauce flavored with chili and onion. Although my favorite pasta variant is spaghetti, I tried this one for the first time and I must say the taste exceeded my expectations. Paccheri pasta itself has a nice flavor so it doesn't require very sharp spices to add life to the preparation. If you want to increase the number of servings, add button mushrooms or roasted eggplants in it. A moist version of this pasta also tastes great provided you've spiced it up a little bit. If you do not have Paccheri pasta in your kitchen, replace it with regular Penne pasta. So, here we go to make this yummy pasta delight.

Paccheri Pasta with Cheesy Chili & Onion Sauce

Spicy and cheesy Paccheri pasta

Enjoy this tasty platter of Paccheri pasta flavored with cheesy and scrumptious chili and onion sauce which elevates the flavor of this recipe by many folds.

Servings: 4

  • 250 gm Paccheri pasta
  • 100 gm red onion paste
  • 200 gm ripe tomatoes (blanched & pureed)
  • 1/2 cup Parmesan cheese (finely grated)
  • 1 red chili paste
  • pinch of black pepper powder
  • 1 garlic clove paste
  • 1/4 tsp dried herbs (finely powdered)
  • chopped basil or cilantro (for garnish)
  • 2 tsp extra virgin olive oil
  • salt to taste


  1. Boil about a liter of water with 1/2 tsp salt.
  2. Switch the flame to medium and add pasta in it.
  3. Stir gently for about 4 to 5 minutes.
  4. Drain all the water and keep the pasta aside.
  5. Heat olive oil in a nonstick pan.
  6. Add garlic paste and saute for a minute.
  7. Add onion paste and stir fry for about 2 to 3 minutes.
  8. Add blanched and pureed tomatoes along with red chili paste.
  9. Stir gently for about 3 minutes.
  10. Add black pepper powder, dried herbs powder and a pinch of salt.
  11. Stir and add grated cheese.
  12. Simmer for about 2 minutes and switch off the flame.
  13. Plate boiled pasta and pour generous amount of onion and chili sauce on top of it.
  14. Sprinkle some grated cheese on top.
  15. Garnish with chopped parsley and serve immediately.
