Today, we're going to make a toast made from toasted baguette slices loaded with blanched spinach drenched in melted cheddar cheese. It is served hot with creamy and lemony mayonnaise bowl. You can also serve them as toasted baguette appetizers at the weekend brunch. Instead of using cheddar cheese, you can also make toasted baguette with goat cheese. If baguette bread is not available, one can use regular bread slices too. Make sure you do not blanch spinach too much else you may not get the desired result. Let's make this scrumptious toast in a few easy steps for our loved ones.

Toasted baguettes with garlicky spinach

Serve these scrumptious and crunchy toasts made with fresh baguette slices toasted to perfection and topped with cheesy blanched spinach and lemony mayonnaise.

Preparation Time: 15 minutes
Cooking time: 25 minutes
Servings: 10

  • 1 baguette loaf (cut in 1" slices)
  • 300 gm tender spinach leaves
  • 10 cheddar cheese slices
  • 1/2 cup mayonnaise
  • 1/5 tsp fresh ground pepper
  • 1 lime juice
  • pinch of salt


  1. Add ground pepper and lemon juice in mayonnaise.
  2. Pulse it for a minute and keep aside.
  3. Light toast baguette slices on a griddle for a minute each side.
  4. Optionally, you can drench the slices in extra virgin olive oil before toasting.
  5. Add pinch of salt in about 1 liter of water.
  6. Bring it to a boil in a deep sauce pan.
  7. Add spinach leaves and switch off the flame.
  8. Drain all the water after 3 minutes and let the excess water evaporate from the leaves.
  9. Heat a cast iron skillet on a medium flame.
  10. Take few blanched spinach leaves on a cheddar cheese slice and place on the skillet.
  11. Cover with a lid and let the cheese melt completely for about 2 minutes.
  12. Remove the lid and place the cheddar drenched spinach on toasted baguette slice.
  13. Repeat the process for all the slices.
  14. Serve immediately with lemony and sharp mayonnaise bowl.
