Although I've used all purpose wheat flour, you can easily make whole wheat focaccia recipe to get a different texture. One can either use fresh garlic or can go with dry garlic powder. You can make focaccia bread in two ways. If you want to keep it bit soft, make sure you reduce the cooking time by half. The fully baked version is more crisp and dark. I generally serve this flavorful bread with seasoned whipped curd. You can easily use different flavoring ingredients for this bread to match your local preferences.   • 3 cups all purpose wheat flour
  • 1 tsp dry yeast
  • 1 tsp sugar
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano powder
  • 30 gm fresh herbs leaves (finely chopped)
  • 1/4 tsp black pepper powder
  • 200 gm Parmesan cheese
  • oodles of extra virgin olive oil
  • salt to taste


  1. Mix dry yeast in 50 ml of water and mix well.
  2. Heat 1 tsp olive oil in a nonstick pan and add garlic powder, dried oregano powder, salt and black pepper powder in it.
  3. Keep the flame low and stir for about a minute.
  4. Add yeast powder liquid and spice infused olive oil in the flour.
  5. Sift it well and add sugar as well.
  6. Slowly start adding water and knead it into soft and elastic dough.
  7. Once glaze with olive oil through a brush and cover with muslin cloth.
  8. Place in a dark and warm corner for about 15 minutes.
  9. Grease the baking tray with olive oil and roll the dough on it with about 1/2" thickness.
  10. Sprinkle cheese and finely minced fresh herb leaves on top of it.
  11. Bake in a preheated oven at 250 degrees for about 15 to 20 minutes.
  12. Cut in square or rectangle shapes before serving.
