Today's duck recipe is filled with hot spices and the goodness of eggplants. It tastes wonderful with butter coated bread. If you get baby eggplants for this recipe, nothing can be better than that as they tend to elevate the overall flavor of this delicious preparation. I always prepare this recipe in a heavy base metal pot to get the authentic taste. One can either use boneless duck meat or the regular one though I prefer the latter version as it gives you the better taste. Szechuan pepper is one of the primary ingredients used in this scrumptious, fulfilling and nutritious recipe and shouldn't be substituted with something else.

Fiery roasted duck with tender eggplants

Do once make this fiery and hot chicken recipe which is flavored with spicy Szechuan peppers and is delicately cooked with fresh and tender eggplants slices.

Preparation Time: 25 minutes
Cooking time: 30 minutes
Servings: 6

  • 2 pounds duck meat
  • 500 gm eggplants (diced)
  • 1/2 tsp Szechuan pepper (crushed)
  • 1 tsp dark soy sauce
  • 1 tomato (sliced)
  • 1 tsp ginger garlic paste
  • 1/2 cup chicken stock
  • 1/4 tsp corn flour
  • few drops of sesame oil
  • 3 tsp peanut oil
  • salt to taste


  1. Parboil duck fillets in a cooker and drain all the water. Keep the semi cooked duck pieces aside.
  2. Heat peanut oil in a wok and add ginger garlic paste in it.
  3. Saute for about 2 minutes and add tomato slices.
  4. Toss and stir fry for a minute and add parboiled duck meat.
  5. Season with dark soy sauce, Szechuan pepper, sesame oil and salt.
  6. Toss and saute for about 3 minutes.
  7. Add eggplants and saute for 2 more minutes.
  8. Finally add chicken stock and cornflour mixed in 2 tsp water.
  9. Once stir and simmer for about 10 minutes with a closed lid.
  10. Serve hot with rice or bread.
