Scrumptious pumpkin pizza

Relish this unique and mouthwatering pizza recipe consisting of delicious pumpkin sheets baked with generous amount of goat cheese and toasty pine nuts.

Preparation Time: 45 minutes
Cooking time: 15 minutes
Servings: 4

  • 2 cups all purpose wheat flour
  • pinch of baking powder
  • pinch of salt
  • pinch of sugar
  • 5 to 6 semi ripe pumpkin sheets
  • 1/4th cup pine nuts paste
  • 250 gm goat cheese (mashed)
  • pinch of white pepper powder
  • pinch of dried herbs powder
  • 1 tsp extra virgin olive oil
  • 1/4th cup mozzarella cheese


  1. Brush all the pumpkin sheets with olive oil and roast in a preheated oven at 200 degrees for just 5 minutes.
  2. Add baking powder, sugar and salt in the flour and knead it into nice pizza dough.
  3. Blend both pine nuts paste and mozzarella cheese in a mixer and keep aside.
  4. Slightly grease the pizza baking tray and roll the pizza dough in it.
  5. Make a layer of pine nuts and mozzarella cheese paste.
  6. Carefully arrange lightly roasted pumpkin sheets on it.
  7. Sprinkle white pepper powder, dried herbs powder and a pinch of salt on top.
  8. Arrange generous amount of rocket lettuce leaves on top of it.
  9. Finally top it with goat cheese and bake in a preheated oven at 250 degrees for about 10 minutes.
  10. Serve hot slicing it in your desired shape.
