Spicy and deep fried eggplant sticks

Savor these deep fried eggplant sticks which are cooked with a spicy and tangy sauce base with fresh and spicy herbs to give you a perfect starter recipe.

Servings: 5

  • 800 gm eggplants (diced or sliced)
  • 1/4 tsp chili flakes
  • 2 tsp light soy sauce
  • 1/4 tsp garlic powder
  • pinch of white pepper powder
  • 1/2" ginger piece (mashed)
  • 1/2 cup vegetable stock
  • 1 tsp corn flour
  • few drops of sesame oil
  • 1/4 tsp cumin seeds powder
  • 1/2 tsp sugar
  • 1 tsp lime juice
  • chopped green onion leaves (for garnish)
  • refined vegetable oil for deep frying
  • salt to taste


  1. Heat vegetable oil in a deep frying pan on a medium flame.
  2. Deep fry all the eggplant dices for about 3 minutes and keep aside on a blotting paper.
  3. Take a wok and heat 1 tsp of refined oil in it.
  4. Add mashed ginger with garlic powder and stir fry for a minute.
  5. Add vegetable stock and quickly season with chili flakes, light soy sauce, white pepper powder, cumin seeds powder, sugar, lime juice and a pinch of salt.
  6. Stir for 2 minutes and add cornflour mixed in 4 tsp of water.
  7. Stir and simmer till the sauce reached thick consistency.
  8. Add fried eggplants with sesame oil and toss for half a minute.
  9. Stir fry on a high flame for about 2 minutes.
  10. Garnish with chopped onion leaves and serve immediately.
