Chicken parmigiana recipe

Enjoy this lip-smacking chicken parmigiana recipe made with fresh chicken breasts and topped with corn, cheese and fresh herbs giving it a divine flavor.

Servings: 5

  • 6 to 8 chicken breasts
  • 1 cup corn (boiled & crumbled or mashed)
  • 3/4 cup pasta tomato sauce
  • 150 gm Parmesan cheese
  • 1/2 cup mozzarella cheese (mashed)
  • 1/4 cup semolina
  • 1 tsp ginger garlic paste
  • 1/4 tsp sweet paprika
  • 1 tsp dried herbs
  • pinch of ground pepper
  • 1 tsp lime juice
  • pinch of white pepper powder
  • 1 green chili (finely minced)
  • chopped coriander (for garnish)
  • groundnut oil for deep frying
  • 2 tsp extra virgin olive oil
  • salt to taste


  1. Heat olive oil in a nonstick frying pan.
  2. Add ginger garlic paste and saute for about 2 minutes.
  3. Add mashed corn with half of the mozzarella cheese and season with lime juice, white pepper powder, minced green chili and salt.
  4. Saute for about 6 to 8 minutes and keep aside.
  5. Take a bowl and add melted Parmesan cheese, sweet paprika, dried herbs, ground pepper and a pinch of salt in it.
  6. Mix all the ingredients with a spoon.
  7. Apply the seasoned cheese well on the fillets and roll them in semolina.
  8. Heat groundnut oil in a deep frying pan on a medium flame.
  9. Fry all the semolina coated chicken breasts till they turn light brown.
  10. Cut all the fillets and stuff corn in it.
  11. Place all the stuffed fillets in a greased baking tray.
  12. Pour pasta tomato sauce on the breasts and sprinkle crumbled mozzarella cheese above it.
  13. Finally sprinkle chopped coriander above it.
  14. Bake in preheated oven at 250 degrees for about 15 minutes.
  15. Serve hot with your favorite beverage.
