Nutritious chickpea salad with mint

Do once try this simple, nutritious and delicious chickpea salad made with fresh herbs and flavoring ingredients making it a complete and fulfilling platter.

Preparation Time: 30 minutes
Cooking time: 25 minutes
Servings: 6

  • 2 cups chickpeas
  • 2 stems of asparagus (chopped)
  • few mint leaves
  • 100 gm tomatoes (chopped)
  • pinch of white pepper powder
  • 1/2 tsp onion powder
  • 2 tsp breadcrumbs (slightly roasted)
  • pinch of paprika
  • pinch of fennel seeds powder
  • 2 tsp extra virgin olive oil
  • salt to taste


  1. Add 1/2 tsp of salt in 1 liter of water and add chickpeas in it.
  2. Soak them overnight in the salty water.
  3. Pressure cook chickpeas in the same water for about 15 minutes.
  4. Drain all the water and keep the chickpeas aside.
  5. Take nonstick grill pan and slightly grease it with olive oil.
  6. Add boiled chickpeas, asparagus and mint leaves and toss for about 2 minutes.
  7. Switch off the flame and transfer in a salad bowl.
  8. Add tomatoes and season with white pepper powder, onion powder, breadcrumbs, paprika, fennel seeds powder, 1 tsp olive oil and salt.
  9. Toss and mix well gently with a wooden spatula.
  10. Serve immediately with your main course food.
