Calamari Fritters with Borlotti Beans and Marinated Eggplants

Calamari Fritters with Borlotti Beans and Marinated EggplantsThe combination of crispy calamari fritter and boiled borlotti beans is awesome. And, if you have flavorful marinated eggplants at the bottom, nothing can be better than that. I've also used some green herbs and vegetables to elevate the flavor and texture. Remember, calamari is very tender and the cooking time is very less. While deep frying them, make sure the oil is not very hot. Instead of borlotti, you can also use local green bean variant provided it is boiled properly. Leftovers of calamari fritters can be included in a curry base. You can also mix squids in this recipe quite easily. Let's quickly make this crunchy, delicious and irresistible multi-flavored calamari recipe for our family members.
