Nutty roast duck with almond and soy glaze

Enjoy this exotic roast duck which has a nutty almond flavor with soy sauce seasoning giving it a scrumptious glaze elevating the overall texture and aroma.

Cooking time: 50 minutes
Servings: 6

  • a medium sized duck (without skin)
  • 1/2 cup almonds (soaked overnight)
  • 6 tsp dark soy sauce
  • pinch of white pepper powder
  • 1 tsp sesame oil
  • oodles of peanut oil
  • salt to taste


  1. Blend almonds with 1/4 cup water into a fine smooth paste.
  2. Take a large bowl and add almonds paste in it with dark soy sauce, white pepper powder, sesame oil, 6 tsp peanut oil and salt.
  3. Whip and mix everything with a spoon for about 5 to 6 minutes.
  4. Pour the marinade on the duck and apply it well on all the sides.
  5. Refrigerate marinated duck for about an hour.
  6. Prepare a wood charcoal oven with maximum heat.
  7. Place the duck in a greased tray and slide it in the oven.
  8. Cover the oven lid and let it roast for about 35 to 40 minutes.
  9. You must check once in between if it's roasting well or not.
  10. Cut into slices and serve immediately.
