If you're using fresh ricotta cheese, let it settle down a bit else it may spoil the bread dough. The goal is to remove excess moisture from the cheese before adding it in the flour. Make sure you make this bread in limited quantity as it cannot be kept for very long. It's ideal for tea time or for breakfast. If you can't find ricotta cheese, you can also try the same bread recipe with a dry cheese available locally that can be easily blended in the dough.

Try this unique bread recipe which includes fragrant ricotta cheese giving a pungent flavor and texture and making your breakfast merrier than ever before.

Preparation Time: 2 hours 20 minutes
Cooking time: 20 minutes
Servings: 10

  • 3 cups all purpose wheat flour
  • 1/4 cup wheat bran (coarsely powdered)
  • 1/2 cup ricotta cheese
  • 1/4 tsp emulsifying agent or yeast
  • 1/2 tsp sugar
  • 1 tsp refined oil
  • pinch of salt


  1. Wrap ricotta cheese in a muslin cloth and put 3 to 4 pounds of weight on it.
  2. Keep in this position for at least an hour.
  3. This will ensure all the excess moisture is removed from the cheese.
  4. After an hour, take out the cheese and crush it with hands or spoon into coarsely ground cheese bits.
  5. Take a large flat plate and add wheat flour, wheat bran, cheese bits, yeast, sugar, salt and oil in it.
  6. Slowly add water and knead the entire flour mixture into dough.
  7. Keep aside for an hour.
  8. Grease the bread tin with refined oil or unsalted butter.
  9. Place the bread dough in it giving it a proper shape.
  10. Bake in a preheated oven at 200 degrees for 15 to 20 minutes.
  11. Bring down to the room temperature and slice in your desired shape.
