Grilled duck fillets with exotic sauce

Savor these exotic duck fillets roasted to perfection and served with seasoned potatoes and delicately flavored grape and red wine sauce with a divine taste.

Preparation Time: 40 minutes
Cooking time: 35 minutes
Servings: 6

  • 10 to 12 duck fillets
  • 500 gm potatoes (medium sized & diced)
  • 100 ml red wine
  • 250 gm red grapes
  • small bunch of fresh thyme (finely chopped)
  • 1/2 cup vegetable stock
  • 1 tsp lime juice
  • 1 tsp pine nuts paste
  • 1 tsp corn flour
  • 1/4 tsp white pepper powder
  • 1/2 tsp dried herbs (finely powdered)
  • pinch of black pepper powder
  • pinch of cumin seeds powder
  • 50 gm onion paste
  • 1/4 tsp garlic powder
  • 2 green chili paste
  • 1/4 tsp paprika
  • 1/2 tsp lime juice
  • 1/4 tsp whole cumin seeds
  • basil leaves (for garnish)
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste


  1. Wash diced potatoes under running water and keep aside dipped in cold water.
  2. Keep dozen grapes aside slitting them into halves.
  3. Blend rest of the grapes in a mixer. Keep aside.
  4. Pierce duck fillets with a fork and place them in a bowl.
  5. Season with finely powdered dried herbs, black pepper powder, cumin seeds powder and salt.
  6. Add 2 tsp olive oil in the bowl and mix all the ingredients well.
  7. Cover with aluminum foil and keep the seasoned duck fillets aside.
  8. Take a nonstick fry pan and add heat 1 tsp olive oil in it.
  9. Add pine nuts paste with finely chopped thyme and saute for a minute.
  10. Add pureed grapes with vegetable stock and red wine.
  11. Switch the flame to low and simmer for about 5 minutes.
  12. Season with white pepper powder, lime juice and salt.
  13. Finally add corn flour and mix well.
  14. Simmer till the sauce reaches right consistency.
  15. Finally add the sliced grapes and close the lid.
  16. Take a wok and heat 2 tsp olive oil in it.
  17. Add whole cumin seeds and crackle for half a minute.
  18. Add onion paste and saute for about 2 minutes.
  19. Add potatoes and season with garlic powder, 1/2 tsp lime juice, green chili paste, paprika and salt.
  20. Toss and mix well and add 1 glass of water.
  21. Cover the lid and simmer till the water dries up and the potatoes are done.
  22. Heat a charcoal grill and place seasoned duck fillets on it.
  23. Grill from both the sides for 6 minutes each.
  24. Take a serving plate and arrange grilled duck fillets on the periphery.
  25. Pour thick grape and red wine sauce in the middle.
  26. Place generous amount of seasoned potatoes in the middle.
  27. Garnish with basil sprig and serve hot.
