Grilled Sardines with Hung Curd and Poached EggsBaby sardines tastes heavenly when grilled with a spicy seasoning. We've done a bit of experimentation with this preparation which came out nicely. If sardines are not available in your local market, use fresh water baby fish generally used in your area. Make sure the fish is fresh to get the best results. We generally serve this recipe with garlic bread though you can consume it with fried rice too. The combination of hung curd and poached eggs is heavenly as they complement each other quite well. The recipe is quite light on spices which can be changed by adding some local seasoning agents. Red snapper fillets can also be used instead of sardines. Let's quickly make this delicious fish preparation.

Spicy grilled sardines with eggs and curd

Do make these spicy grilled sardines which are served with poached eggs and flavored hung curd making it a nutritious and completely wholesome serving.

Preparation Time: 30 minutes
Cooking time: 20 minutes
Servings: 4

  • 500 gm baby sardines
  • 4 cups hung curd
  • 4 to 6 poached eggs
  • 1 tsp dried herbs
  • pinch of paprika
  • pinch of black pepper (coarsely ground)
  • 1 tsp lime juice
  • spring onion for garnish (finely chopped)
  • 1/4 cup extra virgin olive oil
  • salt to taste


  1. Whip the hung curd in a bowl with a pinch of salt and a tsp of extra virgin olive oil for about 5 minutes and keep aside.
  2. Slit sardines from between and wash thoroughly under running water.
  3. Put them in a large bowl and season with dried herbs, paprika, black pepper, lime juice, salt and oodles of extra virgin olive oil.
  4. Apply the seasoning both inside and out of sardines and keep aside for at least 15 minutes.
  5. Heat a grill pan and grease it well with a bit of olive oil.
  6. Grill seasoned sardines in it for about 4 to 5 minutes each side.
  7. Boil water in a sauce pan and prepare poached eggs.
  8. Take a serving plate and place generous amount of whipped curd in between.
  9. Top it with two poached eggs.
  10. Finally arrange grilled sardines around the curd.
  11. Sprinkles dried herbs on top and garnish with chopped spring onions.
  12. Pour a drizzle of extra virgin olive oil from top right before serving.
