Fulfilling artichoke and eggplant pizza

Do make this unique pizza preparation with a nutritious topping of eggplants, artichokes and generous amount of ripe tomatoes seasoned with fresh spices.

Servings: 6

  • 300 gm eggplants (sliced)
  • 300 gm artichokes (steamed)
  • 350 gm tomatoes (blanched pulp)
  • 3 cups all purpose wheat flour
  • pinch of baking powder
  • 2 eggs yolks (whipped)
  • 1/2 cup Parmesan cheese
  • 1 tsp dried herbs
  • 50 gm tomato chili sauce
  • pinch of black pepper powder
  • 3 to 4 tsp extra virgin olive oil
  • salt to taste


  1. Make sure moisture has been removed from the steamed artichokes.
  2. Take wheat flour in a large flat plate.
  3. Add baking powder, egg yolks and a pinch of salt in it.
  4. Knead it into soft pizza dough with lukewarm water.
  5. Keep the dough aside for half an hour.
  6. Place the dough on a flat surface and flatten it into a nice pizza base.
  7. Place a thin layer of tomato and chili sauce on the base.
  8. Arrange a layer of grated Parmesan cheese above it.
  9. Carefully place sliced eggplants, steamed artichoke slices and blanched tomato pulp above it.
  10. Sprinkle dried herbs and black pepper powder above it.
  11. Finally sprinkle grated Parmesan cheese again on the top.
  12. Grease a baking tray with olive oil and place the pizza in it.
  13. Bake in a preheated oven at 300 degrees for about 8 minutes.
  14. Cut its slices in your desired shape.
  15. Serve hot with a chilled soft drink.
