The following recipe is loaded with delicious vegetables mixed with equally tasty cheese and peppers. The entire pizza crust is grilled in a charcoal oven to get the unique aroma and flavor. I've ensured that all the vegetables are thinly sliced to get the best results. If you don't have the charcoal oven, you can use the regular electric grill. Use melted cheese instead of the shredded version to let the veggies absorb it well before grilling. We've used general vegetables found almost everywhere though you can substitute them with your preferred local vegetables. Spicy vegan pizza

Do try this unique vegetable pizza which is baked on a low temperature and includes a rich topping of several delicious vegetables drenched in cheese and spices.

Preparation Time: 1 hour 10 minutes
Cooking time: 12 minutes
Servings: 8

  • 4 cups all purpose wheat flour
  • pinch of baking powder
  • 250 gm tomatoes (sliced)
  • 200 gm button mushrooms (sliced)
  • 250 gm eggplants (sliced)
  • 200 gm baby spinach (coarsely chopped)
  • 200 gm shallots (sliced)
  • 150 gm Parmesan cheese (melted)
  • 100 gm Mozzarella cheese (melted)
  • 2 tsp dried herbs
  • 1 tsp chili flakes
  • pinch of black pepper
  • 1 green chili (finely chopped)
  • 2 to 3 tsp extra virgin olive oil
  • salt to taste


  1. Add baking powder in wheat flour and sift it for a minute.
  2. Use lukewarm water to knead the flour into semi soft dough.
  3. Keep the dough aside for half an hour.
  4. Take all the sliced and chopped vegetables in a bowl and sprinkle black pepper and salt on them.
  5. Toss them and keep aside.
  6. Roll the pizza dough into a flat base.
  7. Arrange lightly seasoned, sliced and chopped veggies on the pizza base.
  8. Sprinkle chili flakes and dried herbs on it.
  9. Mix both the melted cheese in a bowl and pour on the vegetable layer with finely chopped green chilies.
  10. Let the cheese settle down for a minute.
  11. Prepare a charcoal oven with medium heat.
  12. Grease the pizza baking tray with olive oil.
  13. Place the pizza on the tray.
  14. Grill the pizza for about 12 to 14 minutes.
  15. Serve hot with coffee.
