Nutritious zucchini pizza

  • 3 cups all purpose wheat flour
  • pinch of baking powder
  • 1 egg yolk
  • 4 to 5 zucchinis
  • 1 cup Parmesan cheese
  • 2 tsp chili sauce
  • 1/2 cup tomato sauce
  • pinch of garlic powder
  • pinch of white pepper powder
  • 1/2 tsp dried herbs powder
  • oodles of extra virgin olive oil
  • salt to taste


  1. Take a large flat plate and add wheat flour, baking powder, egg yolk, 2 tsp olive oil and a pinch of salt in it.
  2. Mix all the ingredients well and knead it into pizza dough with lukewarm water.
  3. Keep aside for half an hour.
  4. Slice zucchini into long halves and sprinkle garlic powder, white pepper powder and salt on it.
  5. Heat a grill pan and grease it with olive oil.
  6. Grill all the seasoned zucchini for about 4 to 5 minutes.
  7. Make a flat pizza base from the dough in your desired shape.
  8. Sprinkle generous amount of grated Parmesan cheese on the pizza base.
  9. Mix chili sauce with tomato sauce on a small bowl.
  10. Pour it over grated cheese and spread evenly with a spoon.
  11. Sprinkle dried herbs powder on top.
  12. Finally top it with grilled zucchini slices.
  13. Bake in preheated oven at 250 degrees for about 8 minutes.
  14. Serve hot with your favorite beverage.
