Soft ricotta pancakes

Try this soft and cheesy pancake preparation which is drenched in honey and is served with fresh and ice cold fruits making it a nutritious and tasty serving.

Preparation Time: 25 minutes
Cooking time: 30 minutes
Servings: 6

  • 300 gm fresh and soft ricotta cheese
  • 2 cups all purpose wheat flour
  • 100 gm powdered sugar
  • 1/4 cup honey
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp green cardamom powder
  • 2 egg yolks
  • 1/4 cup lukewarm milk
  • 1 cup mixed fruits (strawberry, grapes etc)
  • refined oil for frying
  • pinch of salt


  1. Wash all the fruits and cut them into pieces. Keep in a refrigerator.
  2. Take a large glass bowl and add egg yolks and powdered sugar in it.
  3. Whip it briskly for at least 5 minutes.
  4. Add wheat flour, soft ricotta cheese, powdered sugar, baking powder, cinnamon powder, green cardamom powder and a pinch of salt in it.
  5. Transfer to a blender and pour lukewarm milk in it.
  6. Blend it into a smooth pancake batter.
  7. Take a nonstick flat pan and apply a thin layer of refined oil with brush.
  8. Pour a scoopful of pancake batter and fry from both sides on a low flame till they turn light brown.
  9. Take a serving plate and sprinkle powdered sugar on the base.
  10. Place fluffy pancakes above it and top it with generous amount of honey.
  11. Garnish with fresh and refrigerated fruits and serve immediately.
