Wholesome veggie and rice soup

Enjoy this wholesome and delicious soup preparation which is made with fresh vegetables and short grain rice which is cooked in chicken stock with hot spices.

Servings: 5

  • 1/2 cup short grain rice (soaked overnight)
  • 4 cups chicken stock
  • 1/4 cup zucchini (blanched)
  • 100 gm tomatoes (sliced)
  • 1/4 cup green peas (blanched)
  • small bunch of spinach (finely chopped)
  • 3 to 4 sweet red chilies (slit)
  • 1/5 tsp white pepper powder
  • 1/2 tsp lime juice
  • pinch of paprika
  • 1 small onion paste
  • 1 garlic clove (mashed)
  • 20 gm ginger julienne
  • 1/2 tsp light soy sauce
  • 2 tsp refined oil
  • salt to taste


  1. Heat refined oil in a deep sauce pan and switch the flame to medium.
  2. Add onion paste and mashed garlic in it and saute for 2 minutes.
  3. Add slit red chilies and stir fry for a minute.
  4. Add blanched vegetables and stir fry for 3 to 4 minutes.
  5. Add chicken stock with lime juice, tomatoes and ginger julienne.
  6. Stir for about 2 minutes and add rice.
  7. Close the lid and simmer for about 10 minutes on a low flame.
  8. Add white pepper powder, paprika, light soya sauce and salt and stir for about 3 minutes on a medium flame.
  9. Take out a generous helping of soup in a bowl.
  10. Garnish with chopped spinach and serve hot.
