Unique green tea ice cream

Try this unique ice cream made with fresh green tea leaves and served with sweetened red beans which make this dessert stand out on the dining table.

Preparation Time: 2 hours
Cooking time: 50 minutes
Servings: 10

  • 25 gm fresh green tea leaves
  • 2 liters full cream milk
  • 400 gm whipped cream
  • 1/2 cup read beans (soaked overnight)
  • few drops of edible green color
  • 1/2 cup sugar
  • 150 gm honey
  • 6 egg yolks
  • 1/4 tsp baking soda
  • 50 gm brown sugar
  • pinch of cinnamon powder


  1. Boil soaked red beans in a pressure cooker with half a liter of water for about 15 minutes.
  2. Drain all the water and take out all the red beans in a bowl.
  3. Mash them thoroughly with a spatula.
  4. Boil 500ml water a deep sauce pan and add 1/2 cup sugar in it.
  5. Switch the flame to medium and continuously stir till the water is reduced to 1/4th.
  6. Pour this concentrated sweetened syrup on mashed red beans and mix well.
  7. Refrigerate the sweetened beans covered with an aluminum foil.
  8. Boil full cream milk on a low flame and stir it continuously till it is reduced to half.
  9. Boil green tea leaves in 50 ml of water for about 5 minutes.
  10. Remove the leaves and keep the flavored water aside.
  11. Take a large bowl and add egg yolks in it.
  12. Whip them for about 3 to 4 minutes and add honey with whipped cream.
  13. Whip it again for about 5 minutes till it becomes fluffy.
  14. Slowly pour lukewarm concentrated milk and stir continuously.
  15. Finally add flavored green tea water with drops of green color.
  16. Finish with adding baking soda, brown sugar and cinnamon powder.
  17. Whip the entire ice cream mixture in a blender for about 3 minutes.
  18. Pour the mixture in ice cream containers and refrigerate in a freezer for at least 6 hours.
  19. Take a scoop of green tea ice cream on a plate and serve with sweetened red beans.
