Fried Tofu with Duck Egg Batter and Herbs

Fried Tofu with Duck Egg Batter and HerbsThis recipe use duck eggs for the batter which can be replaced by regular hen eggs. Depending on your taste, you can either take classic tofu or the flavored version. For, getting a crispier texture, do not forget to add semolina. Fried tofu can be kept for 2 to 3 days in a refrigerator. The same methodology can be used to make fried cottage cheese. You can also add the leftovers of this recipe in a spaghetti preparation. Addition of herbs enhances the flavor and the relevant ingredients can be replaced with the local variants. Make sure the slices of tofu are not too thin else they may break while deep frying. I generally prefer to fry them right before serving with all the ingredients ready in advance.
