Zucchini Spaghetti Salad with Dried Tomato Sauce

Zucchini Spaghetti Salad with Dried Tomato SauceDon't be surprised if you don't find spaghetti in this recipe. Yes, we do have spaghetti, but entirely made from zucchini julienne. This unique salad is perfect for barbeque parties with other main course entries. I've used a generous amount of freshly dried herbs in this salad to get the flavor and pungent aroma. To get the best results, use dried cherry tomatoes for the sauce. You can also include cucumber in this recipe to add more depth and taste. The leftovers of this salad can be included in a pasta sauce with real spaghetti. If you don't have an equipment to correctly peel long zucchini julienne, use grated zucchini. You must prepare and serve this tasty salad fresh. The refrigerated version gets too moist.
