Grilled Vegetable Tortilla RollsApart from classic tortilla recipe, one can create different variations to serve this Mexican delight in a unique and interesting way. Today's yummy snack consists of fresh vegetables and crispy tortillas made with the combination of wheat and corn flour. Do not hesitate using the local fresh vegetables for the stuffing. To add icing on the cake, you can pour a spicy dressing on the rolls right before serving. You can also deep fry these rolls in a batter and can serve with a tangy sauce. You can easily refrigerate these rolls for up to two days. These grilled rolls are ideal both for breakfast as well as for the tea time. Although I love eating the entire roll in its original form, my kids prefer smaller square pieces.

Vegan tortilla rolls

Try this easy-to-make tortilla roll recipe stuffed with fresh and delicious vegetables along with cheese, herbs and condiments for a lip smacking flavor.

Preparation Time: 25 minutes
Cooking time: 20 minutes
Servings: 5

  • 8 to 10 wheat & corn tortillas
  • 2 tomatoes (chopped)
  • 2 bell peppers (chopped)
  • 1/2 cup leek (chopped)
  • 250 gm processed cheese
  • 1 jalapeno (finely chopped)
  • 1/4 tsp white pepper powder
  • 1/4 cup boiled corn (coarsely ground)
  • pinch of paprika
  • 6 to 8 tsp extra virgin olive oil
  • salt to taste


  1. Heat 2 tsp olive oil in a shallow pan.
  2. Add tomatoes, bell peppers and leek in it with white pepper powder and a pinch of salt.
  3. Saute for about 2 minutes and bring down from the flame.
  4. Add paprika, jalapeno and corn meal and mix well with a spatula.
  5. Melt processed cheese in a separate frying pan.
  6. Now take a tortilla and apply a layer of melted cheese on it.
  7. Top it with a layer of sautéed vegetable stuffing.
  8. Roll it carefully and generously apply olive oil on the outer side of the roll.
  9. Grill it in a preheated oven for about 5 minutes at 180 degrees.
  10. Serve hot with a tangy sauce.
