Leftovers of this salad can be included in a patty base and can be shallow fried with a batter wrapping.

Nutritious beans and rice salad

Relish this unique and healthy salad platter loaded with the goodness of green beans and black olives mixed with rice and tomatoes to fulfill your tummy.

Servings: 5

  • 300 gm rice (soaked overnight)
  • 200 gm green beans (chopped)
  • 1/2 cup semi dried black olives
  • 150 gm cherry tomatoes (finely chopped)
  • 100 gm onions (finely chopped)
  • 1/2 tsp sesame oil
  • pinch of white pepper powder
  • few drops of white vinegar
  • 2 tsp lime juice
  • oodles of extra virgin olive oil
  • salt to taste


  1. Boil rice with 1/2 liter of water for about 12 minutes.
  2. Drain all the water and keep the rice aside.
  3. Steam green beans for about 8 minutes and keep aside.
  4. Take a large salad bowl and add boiled rice in it.
  5. Add steamed green beans and mix well with a spatula.
  6. Add finely chopped onions and tomatoes.
  7. Mix sesame oil, white vinegar, lime juice and 4 tsp of olive oil in a bowl.
  8. Pour it over the salad base and mix well.
  9. Season it with white pepper powder and salt.
  10. Finish the recipe by adding semi dried black olives in the end.
  11. Serve immediately with a main course dish.
