Curried Coconut Milk Noodles with Mushrooms and PeanutsHere in the Indian subcontinent, coconut milk is generally used in the southern peninsula. But today, I've used it in a delicious noodle recipe. Canned coconut milk is readily available in grocery stores. Although rice noodles go well with the ingredients mentioned here, I've used regular wheat noodles. Depending on your taste, you may reduce the amount of coconut milk used in this preparation. You must consume these noodles on the same day as coconut milk may spoil it if kept for a long time. It is not only aromatic but is healthy too as coconut milk contains several vital nutrients which are good for hair and skin. You can also add some sprouted beans, eggplants and bell peppers for a colorful presentation.

Creamy coconut milk noodles

Try this unique noodles preparation which includes generous amount of flavored coconut milk along with mushrooms and peanuts making it a complete meal.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 4

  • 300 gm wheat noodles
  • 250 gm coconut milk
  • 200 gm mushrooms (chopped)
  • 50 gm peanuts (slightly roasted)
  • 100 gm onion slices
  • 1/4 tsp garlic powder
  • pinch of white pepper powder
  • pinch of black pepper (coarsely ground)
  • few drops of malt vinegar
  • 4 tsp extra virgin olive oil
  • salt to taste


  1. Boil half a liter of water in a sauce pan and add noodles in it.
  2. Stir for about 2 minutes and switch off the flame.
  3. Drain excess water and keep the noodles aside.
  4. Heat olive oil in a wok on a medium flame.
  5. Add onion slices and saute till they become transparent.
  6. Add mushrooms and peanuts and switch the flame to low.
  7. Immediately season with garlic powder, white pepper powder, black pepper and a pinch of salt.
  8. Stir fry for 3 to 4 minutes.
  9. Add coconut milk and cover the lid.
  10. Simmer for about 5 minutes.
  11. Add noodles with malt vinegar and stir fry for 3 to 4 minutes on a high flame.
  12. Serve hot with fruit juice and chips.
