Chicken breast or whole chicken is an ideal candidate for stuffed preparation provided it's made equally scrumptious both from inside and outside. Today's recipe includes unique rice and crawfish stuffing that makes the roasted chicken, an absolute delicacy. If crawfish is not available in your locality, you can use a local fish or tiger prawns. With some innovation, you can make the stuffing used in this recipe as a standalone preparation. You can also use chicken breasts instead of whole chicken. Depending on your taste, you can change some of the spices to get a local flavor. Let's make this stuffed roasted chicken.

Delicious crawfish stuffed whole chicken

Make this fulfilling chicken preparation which is stuffed with rice and crawfish flavored with awesome spices giving it a unique and lip-smacking flavor.

  • 1 large whole chicken
  • 400 gm crawfish
  • 1 cup rice
  • 2 tsp ginger garlic paste
  • 1/4 tsp paprika
  • 1/2 cup tomatoes (chopped)
  • 2 green chilies (chopped)
  • 4 tsp onion paste
  • pinch of white pepper powder
  • 1/4 tsp coriander seeds powder
  • 1/4 tsp cumin seeds powder
  • 1/4 tsp turmeric powder
  • 5 tsp tomato puree
  • 1/4 tsp dried herbs
  • coriander and tomato salsa for garnishing
  • 1/4 cup extra virgin olive oil
  • salt to taste


  1. Wash crawfish and remove the shells. Chop them into small pieces and keep aside.
  2. Soak rice in lukewarm water for 15 minutes
  3. Take tomato puree, paprika, white pepper powder and salt in a small bowl.
  4. Mix all the ingredients well and apply it well on the outer side of the chicken.
  5. Heat 5 tsp olive oil in a shallow frying pan.
  6. Add onion paste in it and saute for about a minute.
  7. Add ginger garlic paste and stir fry on a low flame for two minutes.
  8. Add chopped tomatoes, green chilies and dried herbs.
  9. Saute for about a minute and add crawfish.
  10. Season it with coriander seeds powder, cumin seeds powder, turmeric powder and salt.
  11. Stir fry on a medium flame for about 2 minutes and add immediately add rice.
  12. Add 1 glass of water and cover the lid.
  13. Simmer for about 8 minutes and switch off the flame.
  14. Stuff the crawfish rice in the marinated chicken and place it on a greased baking tray.
  15. Apply olive oil generously on the outer part of the chicken.
  16. Roast in a preheated oven for about 12 minutes at 200 degrees.
  17. Garnish with tomato salsa and coriander and serve immediately.
