Basmati is one of the premium quality rice available in this country. The following recipe is quite simple but is rich, nourishing and delicious at the same time. I've included carrots, green beans, and peas which can be easily substituted with the popular vegetables available in your local store. The clarified butter used in this recipe can be made easily at home. You can also add some dry fruits in this recipe to further enrich the entire preparation. I generally serve it with spicy chicken curry though it can be relished alone as well. Avoid using short grain rice in case basmati is not available. Let's make this light rice preparation.

Vegan basmati rice with buttery flavor

Enjoy this rice preparation made with long grain basmati rice and flavored with butter and mild spices with loads of veggies making it a complete meal.

Servings: 5

  • 400 gm basmati rice
  • 1/4 cup clarified butter
  • 250 gm carrots (diced)
  • 200 gm green beans (chopped)
  • 1/4 cup peas
  • 1 green chili (finely chopped)
  • 50 gm onions (finely chopped)
  • 1/2 tsp garlic paste
  • 1/4 tsp ginger paste
  • pinch of white pepper powder
  • salt to taste


  1. Wash rice 2 to 3 times under running water and soak them in lukewarm water for half an hour.
  2. Heat clarified butter in a sauce pan.
  3. Add ginger garlic paste and saute for about a minute.
  4. Add chopped onions and stir fry for 2 minutes on a medium flame.
  5. Add chopped green chili and saute for half a minute.
  6. Add carrots, green beans, peas and stir fry for about 3 minutes.
  7. Season with white pepper powder and salt.
  8. Add rice and 2 glasses of water.
  9. Cover the lid and simmer for about 15 minutes.
  10. Garnish with fried coriander and serve immediately.
