Grilled Eggplants with Garlic and Crispy ShrimpsEggplant is yet another nutritious vegetable my entire family loves to consume. I often grill it with herbs and spices and serve hot. Today's recipe includes fresh eggplants with a generous amount of garlic and crispy shrimp pieces. Vegetarians can omit shrimps and can replace it with corn flakes. Use a generous amount of extra virgin olive oil to get the best results. You can use green or white eggplants too for this recipe though purple eggplants taste best. One can also stuff shrimp and garlic topping in these eggplants to prepare a variant of the same. You can prepare grilled zucchini in exactly the same way provided you serve it with a sauce. Let's make these moist, spicy and delicious eggplants.

Garlicky grilled eggplants

Do make these garlicky eggplants which are grilled with delicious shrimps and drenched in oodles of extra virgin olive oil giving it a nice texture and flavor.

Preparation Time: 20 minutes
Cooking time: 15 minutes
Servings: 4

  • 600 gm eggplants (sliced)
  • 200 gm dried shrimps (chopped)
  • 10 to 12 garlic cloves (coarsely chopped)
  • 1 tsp dried herbs
  • 1/2 tsp paprika
  • 1/4 tsp cumin seeds powder (roasted)
  • 2 tsp ginger garlic paste
  • 1 green chili paste
  • 2 tsp semolina
  • 1 tsp soy sauce
  • 1 tsp Thai curry paste
  • 1/4 cup extra virgin olive oil
  • salt to taste


  1. Heat 3 tsp olive oil in a wok and add dried shrimps in it.
  2. Saute for about a minute and add soya sauce, Thai curry paste and a pinch of salt.
  3. Sprinkle semolina on top and stir fry for about 4 to 5 minutes on a high flame till they turn crispy. Keep aside.
  4. Make deep cuts in eggplants slices.
  5. Take a small bowl and add dried herbs, paprika, cumin seeds powder, ginger garlic paste, green chili paste and salt in it.
  6. Mix it well with a spoon.
  7. Grease a grilling tray and place eggplant pieces on it.
  8. Apply spicy marinade on top and sprinkle chopped garlic cloves above it.
  9. Top it with crispy stir fried shrimps.
  10. Pour generous amount of extra virgin olive oil on top of each of the eggplants pieces.
  11. Grill in a preheated oven for about 5 minutes at 200 degrees.
  12. Garnish with chopped coriander and serve hot.
