Egg Fried Noodles with Bean Sprouts and PepperStir-fried noodles are one of the favorite edibles for my kids. Generally, I avoid street noodles and try to make them at home with quality ingredients. Today's noodles contain the goodness of eggs, bean sprouts, and two different peppers. You can also add boiled beans if you do not want to wait for sprout formation. I've added both green and red chilies in these noodles. You can omit one of them to keep it less fiery. Both rice and wheat noodles can be used in this recipe but make sure they're fresh. As always, I'll suggest you to add shrimps to these noodles to make them a complete meal. To get the best results, use a regular wok instead of the pan while mixing scrambled eggs with these spicy noodles.

Wholesome egg noodles with veggies

This wholesome wheat noodles preparation includes eggs with bean sprouts and flavorful seasoning ingredients which gives it a spicy and aromatic taste.

Preparation Time: 25 minutes
Cooking time: 15 minutes
Servings: 4

  • 250 gm wheat or rice noodles
  • 3 to 4 eggs
  • 1 cup bean sprouts
  • 1/2 tsp soy sauce
  • 1/4 tsp malt vinegar
  • few drops of fish sauce
  • 1/4 tsp chili flakes
  • 1 green chili paste
  • pinch of white pepper powder
  • 2 garlic cloves (mashed)
  • 4 tsp olive oil
  • salt to taste


  1. Boil 2 liters of water with half a tsp salt in it.
  2. Add noodles in it and switch off the flame.
  3. Stir noodles slowly for about 4 minutes.
  4. Drain all the water and keep the noodles aside.
  5. Take a glass bowl and break all the eggs in it.
  6. Season them with a pinch of salt and whip for about a minute. Keep aside
  7. Take a large wok and heat olive oil in it.
  8. Add mashed garlic cloves and saute for about one minute.
  9. Add whipped and seasoned eggs and quickly stir in a brisk fashion.
  10. Quickly add noodles and let the eggs cover all the noodles.
  11. Add soy sauce, malt vinegar, fish sauce, chili flakes, white pepper powder and a pinch of salt.
  12. Toss well and stir fry for about 3 to 4 minutes.
  13. Add green chili paste and bean sprouts.
  14. Mix well with a spatula and saute for a minute. Switch off the flame immediately.
  15. Serve hot with a strong coffee.
