Corn Tacos with Bean Salsa and Sour CreamI often stuff seafood in tacos for my kids and family who love them too much. Today's delicious corn tacos are filled with moist bean salsa and seasoned sour cream. Tacos stuffing can be made in almost infinite ways and it all depends on your imagination and the ingredients available in your kitchen. I always prefer crispy corn tacos as they taste better than the regular wheat tacos and obviously are much crispier than the latter. While making tacos, ensure that the entire stuffing looks colorful as it is generally open while serving. That's one of the simple secrets of selling more tacos. Apart from regular boiled beans, you can also add different kinds of sprouts to make these tacos more nutritious and crunchy.

Fulfilling and tangy corn tacos filled with beans

Enjoy these fulfilling, delicious and crispy tacos made from corn tortillas and filled with hot bean salsa which is flavored with pungent spices and cream.

Servings: 6

  • 10 to 12 crispy corn tortillas
  • 1 cup white beans (boiled)
  • 1 cup black beans (boiled)
  • 1 cup corn (boiled)
  • 2 big ripe tomatoes (chopped)
  • 2 big red onions (finely chopped)
  • bunch of cilantro (chopped)
  • 3 tsp lime juice
  • 1/4 tsp black pepper (coarsely ground)
  • 2 cups fresh whipped cream
  • 1/2 cup grated cheese
  • 4 to 5 jalapenos (chopped)
  • 1 cup cucumber (chopped)
  • pinch of garlic powder
  • 3 to 4 tsp extra virgin olive oil
  • oil for deep frying
  • salt to taste


  1. Heat oil in a deep frying pan on a high flame.
  2. Quickly fry all corn tortillas and place on soaking paper to remove excess oil.
  3. Take a large bowl and add white beans, black beans and corn in it.
  4. Mix well with a wooden spatula.
  5. Add tomatoes, red onions, cilantro, lime juice, jalapenos, cucumber, 3 to 4 tsp extra virgin olive oil and salt in it.
  6. Toss it well so that all the ingredients are mixed well. Keep aside.
  7. Take a separate bowl and add whipped cream to it.
  8. Add black pepper, grated cheese, garlic powder and 1 tsp olive oil in it.
  9. Whip it again to prepare your seasoned sour cream.
  10. Take each crispy corn tortilla and stuff beans salsa in it.
  11. Top it with delicious sour cream and sprinkle some black pepper powder on top.
  12. Serve hot with tea or coffee.
