Roasted Chicken with Potatoes and Cottage Cheese SaladQuite similar to potatoes, chicken is also a versatile eatable that can be cooked in different ways. Today's roasted chicken includes sautéed and seasoned potatoes with a healthy cottage cheese and tomato salad serving. This makes it a complete meal that can be further enriched with garlic bread soaked in extra virgin olive oil. Use homemade cottage cheese for the salad to get the best results. We've not used a standard dressing for this salad which can be made as per your own taste preferences. If you prefer less oily food, you can grill or roast potatoes in an oven with minimal oil. If you have a small oven, you can chop the chicken into smaller pieces to get it roasted evenly from all the sides.

Wholesome roasted chicken platter with potatoes

Make this wholesome and fulfilling platter of spicy and roasted chicken served with delicious potato and fresh cottage cheese salad seasoned to perfection.

  • 1 large chicken
  • 500 gm potatoes (diced and parboiled)
  • 200 gm cottage cheese
  • 300 gm red tomatoes
  • 3 to 4 tsp red curry paste
  • 1 tsp lime juice
  • 2 tsp ginger garlic paste
  • 1/2 tsp balsamic vinegar
  • 1/4 tsp black pepper coarsely ground
  • 1/4 tsp dried herbs
  • pinch of white pepper powder
  • pinch of sugar
  • small bunch of cilantro (chopped)
  • 6 to 8 tsp olive oil
  • salt to taste


  1. Wash chicken well under running water and keep aside.
  2. Take a large bowl and place chicken in it.
  3. Mix red curry paste, lime juice, ginger garlic paste, balsamic vinegar and salt with 2 tsp olive oil.
  4. Apply this spicy marinade on all the sides of the chicken with your hands.
  5. Refrigerate it for at least 10 minutes.
  6. Preheat oven at 250 degrees and roast the marinated chicken for at least 10 minutes.
  7. Take a shallow frying pan and add 3 to 4 tsp of extra virgin olive oil.
  8. Once the oil heats up switch to medium flame and add potatoes in it.
  9. Quickly stir fry for about a minute and sprinkle coarsely ground black pepper, dried herbs, and salt in it.
  10. Saute for 2 more minutes and bring down from the flame.
  11. Slice tomatoes in a salad bowl.
  12. Divide cottage cheese into small pieces with hands.
  13. Add cheese with tomatoes and sprinkle white pepper powder, sugar and salt in it.
  14. Toss the salad well and mix everything with a wooden spatula.
  15. Take a large serving plate and place roasted chicken in between.
  16. Arrange sautéed potatoes on one side and cheese tomato salad on the other side.
  17. Garnish with chopped cilantro and serve hot.
