We've included simple potato mash in the pancake batter for a completely unique texture. The accompanying mushroom sauce is seasoned with cinnamon powder and sugar to complement the pancake. You can easily replace regular potatoes with sweet potatoes for this recipe. I've kept some mushroom pieces in this sauce, but you can mash them too. While adding potato mash in the pancake batter, make sure you put the right proportion as mentioned here else they'll not come out nicely. Let's try this easy-to-make and scrumptious dessert.

Light and soft potato pancakes

Try these unique and lightly flavored potato pancakes preparation served with mouth-watering mushroom sauce that perfectly complements the fluffy pancakes.

  • 250 gm potatoes
  • 3 cups wheat flour
  • 200 gm button mushrooms
  • 2 egg yolks
  • 3 tsp unsalted butter
  • 1/4 tsp baking powder
  • 2 cups milk
  • 1/4 cup powdered sugar
  • 1/2 tsp cinnamon powder
  • 5 tsp brown sugar
  • 1/2 cup fresh cream
  • 5 tsp olive oil
  • salt to taste


  1. Boil 3/4th of mushrooms for about 3 to 4 minutes and blend them into a fine paste.
  2. Chop and steam the remaining mushrooms for about 5 minutes and keep aside.
  3. Boil potatoes for about 7 to 8 minutes and mash them well.
  4. Sift together wheat flour, unsalted butter, baking powder, mashed potatoes and a pinch of salt.
  5. Beat egg yolks with milk and powdered sugar.
  6. Add to flour and mix well to form a batter for the pancakes.
  7. Add fresh cream, mashed mushroom paste, cinnamon powder and brown sugar in a shallow frying pan.
  8. Simmer on a low flame for about 6 to 7 minutes.
  9. Add steamed mushrooms pieces and continuously stir for about 2 more minutes.
  10. Grease a flat frying pan with olive oil and heat it on a medium flame.
  11. Make pancakes from the batter and arrange on a serving plate.
  12. Pour the seasoned mushroom sauce on top and serve hot.
