Try these unique and lightly flavored potato pancakes preparation served with mouth-watering mushroom sauce that perfectly complements the fluffy pancakes.

Ingredients:
- 250 gm potatoes
- 3 cups wheat flour
- 200 gm button mushrooms
- 2 egg yolks
- 3 tsp unsalted butter
- 1/4 tsp baking powder
- 2 cups milk
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon powder
- 5 tsp brown sugar
- 1/2 cup fresh cream
- 5 tsp olive oil
- salt to taste
Instructions:
- Boil 3/4th of mushrooms for about 3 to 4 minutes and blend them into a fine paste.
- Chop and steam the remaining mushrooms for about 5 minutes and keep aside.
- Boil potatoes for about 7 to 8 minutes and mash them well.
- Sift together wheat flour, unsalted butter, baking powder, mashed potatoes and a pinch of salt.
- Beat egg yolks with milk and powdered sugar.
- Add to flour and mix well to form a batter for the pancakes.
- Add fresh cream, mashed mushroom paste, cinnamon powder and brown sugar in a shallow frying pan.
- Simmer on a low flame for about 6 to 7 minutes.
- Add steamed mushrooms pieces and continuously stir for about 2 more minutes.
- Grease a flat frying pan with olive oil and heat it on a medium flame.
- Make pancakes from the batter and arrange on a serving plate.
- Pour the seasoned mushroom sauce on top and serve hot.
