Grilled Eggplants with Thyme and OreganoThis is one of the simplest yet tastiest eggplant recipes made by me! All you need is some fresh eggplants, a combination of herbs and a hot wooden grill. Earlier, I used to make this recipe by shallow frying but eggplants were absorbing a lot of oil during the entire process. The grilled version is comparatively much tastier and needs less oil. You can also make grilled zucchini in the same way with a bit more spices. If a wooden grill is not available in your home, you can microwave these eggplants with a generous amount of extra virgin olive oil. You can also squeeze fresh lime juice on the grilled eggplants for a tangy and smoky flavor that's almost irresistible. Let's make this recipe right now!

Herbs infused grilled eggplant slices

Prepare your charcoal grill and make this flavorful eggplant slices flavored with delicious spices and herbs to make your meal fulfilling and delicious.

  • 400 gm eggplants
  • 1/2 tsp oregano (dried and powdered)
  • 1/2 tsp thyme (dried and powdered)
  • 1/2 tsp black pepper powder (coarsely ground)
  • oodles of extra virgin olive oil
  • salt to taste


  1. I'll strongly advocate for having a charcoal grill for making this recipe.
  2. You can either use long or round eggplants for this preparation.
  3. Wash all the eggplants and make quarter inch thick slices.
  4. Mix oregano, thyme, black pepper powder and salt in a small bowl.
  5. Arrange eggplants on a large plate and sprinkle the seasoning on top.
  6. Mix it well so that the spices are applied on both sides of the slices.
  7. Heat the charcoal grill.
  8. Apply olive oil on the slices and grill them for about 2 to 3 minutes from both sides
  9. Serve hot with tea and a tangy dip.
