I've also used homemade tomato sauce that's much mild in flavor compared to a regular version available in the market. While making this recipe, do not remove egg yolk as it is a necessary part to get the right texture for the omelet.

Do make this fluffiest and delicious omelet preparation that’s mild and delicate in taste but can be prepared in no time without any kind of complex steps.

Preparation Time: 10 minutes
Cooking time: 20 minutes
Servings: 3

  • 6 eggs
  • 2 red tomatoes (nice and big)
  • 1 tsp sugar
  • pinch of white pepper powder
  • 1 tsp lime juice
  • pinch of oregano powder
  • pinch of paprika
  • 2 drops of malt vinegar
  • cilantro for garnishing
  • 3 tsp olive oil
  • salt to taste


  1. Take 6 eggs in a large bowl.
  2. Add white pepper powder, lime juice, oregano powder, paprika, malt vinegar and salt in it.
  3. Whip it for at least 5 minutes. Keep aside.
  4. Blanch both tomatoes and make a fine paste.
  5. Heat a shallow frying pan. Add tomato puree, sugar and a pinch of salt.
  6. Simmer for at least 5 minutes. Keep aside.
  7. Take a pan and add 3 tsp olive oil.
  8. Add beaten eggs on a low flame and fry from both sides till light brown.
  9. Garnish with chopped cilantro.
  10. Serve hot with tomato sauce.
