But, making them as crispy as the one we buy from market requires a simple trick. There are few things that need to be taken care of to get the desired crispiness. The seasoning I've used for these chips is a combination of cheese and hot Cayenne pepper. You can omit peppers to get a prominent cheesy flavor. I generally make these chips in summer as they dry quickly and come out nicely. You can use the same methodology given here to make crispy plain salted chips or French fries. Make sure you have a perfect slicer in your kitchen for making thin and even slices of potato chips.

Spicy thin potato chips

Make this variant of classic salted potato chips which are flavored with delicious cheese and pepped-up with fiery cayenne pepper to liven up your taste buds.

Preparation Time: 25 minutes
Cooking time: 20 minutes
Servings: 5

  • 500 gm large and firm potatoes
  • 1/2 cup Parmesan cheese
  • 1/2 tsp Cayenne pepper powder
  • pinch of salt
  • 1 cup vegetable oil
  • 1 cup canola oil


  1. Wash and peel all the potatoes.
  2. Make thin and even slices and keep them in water to avoid discoloration.
  3. Boil 5 liters of water and add pinch of salt in it.
  4. Switch off the flame and add sliced potatoes in it.
  5. Stir for about 1 minute and take out on a plastic or muslin sheet.
  6. Let them dry for about 10 minutes.
  7. Mix both vegetable and canola oil in a large wok.
  8. Heat the oil on a high flame.
  9. Fry potato chips till they're light brown and place on oil absorbing paper.
  10. Grate Parmesan cheese and add Cayenne pepper to it.
  11. Add potatoes to it and mix well with soft hands.
  12. Take out the chips and keep them in an air tight container.
  13. Serve them with tea or coffee.
