Cheesy Potato Salad with Green Onions and MintPotatoes can be included in a salad in various forms. You can either include them in baked or grilled form or you can include them in boiled or mashed form. Potato salad should be consumed on the same day as it cannot be refrigerated for a long time. The recipe given here comes out best when you're using fresh small potatoes with their skin. You can also add carrots and tomatoes to this salad to make it more colorful. If you don't like mint leaves, use finely chopped coriander leaves for added flavor. Instead of using a dressing for this salad, I've used a regular seasoning of few mild spices. Potato salad with roasted or baked oats is in itself a complete meal and can be consumed at any time of the day.

Cheesy and herb infused potato salad

Try this unique and tasty potato salad preparation with a cheesy texture which also includes flavorful green onion and loads of pungent and sharp mint leaves.

Servings: 4

  • 300 gm small new potatoes
  • 3 green onions (finely chopped)
  • 1 small cabbage(finely chopped)
  • small bunch of fresh mint leaves (finely chopped)
  • 1/4 tsp dried herbs
  • 3 tsp melted processed cheese
  • 1/2 tsp black pepper powder (coarsely ground)
  • 1/2 tsp fresh lime juice
  • pinch of sea salt
  • 3 to 4 tsp extra virgin olive oil


  1. Wash all the potatoes in fresh water and chop them into 4 pieces each.
  2. Do not remove their skin.
  3. Bake them on a greased plate for about 4 minutes at 180 degrees.
  4. Take a large salad bowl and put all chopped potatoes in it.
  5. Add chopped green onions, cabbage, mint leaves and mix well with spatula.
  6. Add melted cheese, extra virgin olive oil and fresh lime juice.
  7. Mix it well again for about 2 minutes with a spatula.
  8. Just before serving, add dried herbs, black pepper powder and a pinch of sea salt.
  9. Quickly toss the salad and service with chips and a dip.
