Toasted Bread With Garlic Spread And MushroomsI've been experimenting with toasts and sandwiches throughout January and this is one of the findings that tastes great and is ideal for breakfast. We all know the health benefits of garlic which is used in a generous amount in this recipe. If you avoid toasted wheat bread, you can use the normal one too. Mushrooms add the nutritious value to this toast and a garnish of green apple julienne adds more fiber and nutrients to the entire preparation. To get the best results, do use extra virgin olive oil for making this toast. You can either use spinach or basil with mushrooms to give more color to the topping. And last but not the least; serve them hot as the leftovers may not taste as good as the fresh ones.

Delicious garlic and mushroom toasts

Try this fulfilling breakfast toast recipe you can relish at evening tea time too which consists of mushrooms, aromatic garlic spread and flavorful spices.

Preparation Time: 15 minutes
Cooking time: 20 minutes
Servings: 6

  • half loaf of whole wheat bread
  • 2 cups of Chanterelle mushrooms (chopped)
  • 1/2 cup kale (chopped)
  • 2 tsp fennel seeds
  • 1/4 cup hazelnuts
  • 1/2 cup garlic spread
  • 1/4 tsp white pepper powder
  • 1/4 tsp thyme
  • 1 green apple
  • 1/4 cup basil (chopped)
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste


  1. Crush fennel seeds and soak them in little water.
  2. Heat 3 tsp olive oil in a shallow frying pan.
  3. Add hazelnuts and saute for about a minute.
  4. Add mushrooms and kale and stir fry for about a minute.
  5. Add white pepper powder, salt, crushed fennel seeds, thyme and chopped basil.
  6. Saute for about 3 to 4 minutes and bring down from the flame.
  7. Cut whole bread into equal pieces and toast them with extra virgin olive oil.
  8. Apply a layer of garlic spread and top it with roasted mushrooms.
  9. Garnish with shredded green apple and serve hot.
