
Stuffed Potatoes with Cheese Bread Crumbs and Veggies

Make this lip smacking grilled appetizer made from long and delicious potato boats which are stuffed with cheesy bread crumbs and seasoned vegetables.

Ingredients:
- 8 to 10 long potatoes
- 1 cup bread crumbs
- 1 cup shredded processed cheese
- 1 tomato (finely chopped)
- 1 onion (finely chopped)
- 3 to 4 garlic cloves (finely minced)
- 1/4 tsp coarsely ground black pepper powder
- 1/4 tsp paprika powder
- bunch of coriander leaves (chopped)
- 3 tsp olive oil
- salt to taste
Instructions:
- Wash potatoes thoroughly and cut into two equal halves.
- Scoop out extra potato flesh from between to give it a boat like structure.
- Apply little bit of olive oil inside the potato boats and microwave for a minute.
- Take a large mixing bowl and add bread crumbs, tomatoes, onions, black pepper powder, minced garlic and salt.
- Mix well and stuff it well in all of the potato boats.
- Add shredded cheese and paprika powder on top.
- Grill in a preheated oven for 5 minutes at 180 degrees.
- Garnish with chopped coriander and serve hot with your favorite drink.
- You can also cover two potato halves opposite to one another to make a closed stuffing.
- This should be done after the grilling is complete.
