My kids love it and demand a shrimp's recipe at least once every month. There are several ways to cook shrimps with rice. You can either combine them with other sea food or can mix with veggies like I've done in this recipe. I generally prefer to add some fiber to each meat preparation. Unlike traditional Thai and Chinese fried rice cooking, I've given some twist to this recipe to include some Indian touch. You'll be surprised by its unique taste that comes from the fusion of Thai and Indian spices. You can also add squid to this recipe if it is easily available in your market. So here we go and make this delicious fried rice recipe with some fusion tricks.

Scrumptious shrimp fried rice

Enjoy this light yet extremely delicious fried rice recipe made with mouthwatering seasoned shrimps and fresh green peas that are fulfilling and tasty.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 5

  • 350 gm long grain rice
  • 250 gm fresh shrimps (deveined)
  • 200 gm tofu
  • 1 cup peas
  • 25 gm galangal (Thai ginger)
  • 1 tsp red Thai curry paste
  • 2 garlic cloves
  • 1/4 tsp white pepper powder
  • 2 green cardamoms
  • 1/4 tsp turmeric powder
  • 4 tsp extra virgin olive oil
  • salt to taste


  1. Parboil peas and rice in separate pans.
  2. Drain the extra water and keep aside.
  3. Cut tofu into small 1/2" pieces.
  4. Finely mince both galangal and garlic.
  5. Grind green cardamom in a blender.
  6. Heat oil in a large wok.
  7. Add garlic and galangal once oil heats up.
  8. Saute for about 2 minutes.
  9. Add tofu, shrimps and peas and stir continuously.
  10. Saute for about 2 minutes.
  11. Add cardamom powder, white pepper powder, red curry paste and little water.
  12. Saute for about 5 minutes.
  13. Add rice, turmeric powder and salt as per your taste.
  14. Saute it on high flame and stir continuously for about 3 to 4 minutes.
  15. Serve hot with your favorite dip or sauce.
